Stuffed Peppers

Ingredients

  • 2 green bell peppers
  • 2 yellow bell peppers
  • 2 red bell peppers
  • 1/2 cup brown rice
  • 1 cup water
  • 1 lb. ground beef
  • 2 cloves minced garlic
  • 1 onion
  • 8 oz. tomato sauce
  • 1 tbsp. worchestershire
  • 1 tsp. Italian seasoning
  • 1/2 cup parmesan cheese
  • Salt and pepper to taste

Directions

  • Preheat oven to 350º
  • Boil brown rice and water in saucepan. Redue heat to medium-low, cover, and simmer until the rice absorbs the water (about 45 minutes).
  • Cook and stir beef, garlic, and onion in skillet over medium heat until meat is evenly browned and onio is softened (about 5 minutes).
  • Remove and discard seeds and tops of peppers. Arrange peppers in baking dish with hollowed sides facing upwards.
  • Mix beef, rice, tomato sauce, Worchestershire, salt and pepper in a bowl. Spoon equal amounts into peppers. Mix remaining tomato sauce and Italian seasoning and pour overtop the peppers.
  • Bake one hour, basting with sauce every 15 minutes. Add parmesan before serving.
