Vegetable Stir-Fry

Ingredients

Stir-Fry

  • 1 Red Pepper - sliced into 1/4 in. matchsticks
  • 2 Cloves Garlic - minced
  • 1 Onion - sliced 
  • 1 Broccoli Crown - cut into bite-size pieces
  • 2 Carrots - sliced into thin rounds
  • 1 Cup Rice - cooked, set aside.

Sauce

  • 2 Tablespoons - Soy Sauce
  • 2 Tablespoons - Maple Syrup
  • 1 Teaspoon - Rice Wine Vinegar
  • Red Pepper Flakes (to taste)
  • Salt and Pepper (to taste)

Optional Garnishes

  • Green Onions
  • Sesame Seeds

Directions

  • Cook rice.
  • Heat 1-2 tablespoons cooking oil in pan until glistening. 
  • Add onions, carrots, and peppers, cook 8-10 minutes or until softened. Stir frequently.
  • Add garlic, cook 2-3 minutes or until fragrant. Stir frequently.
  • Add broccoli, cook 3-5 minutes. Stir frequently.
  • Combine all sauce ingredients in medium-sized bowl and stir to combine. 
  • Add sauce to pan with vegetables. Cook until warmed through. Add starch (corn or tapioca will do) to thicken sauce, if desired.
  • Divide rice between servings. Top with sauteed vegetables and sauce. Top with garnishes, if desired.
