Easy Eggplant Parmesan

Ingredients

  • 3 eggplants

  • 2 tsp. basil

  • 1 whole egg

  • 3 egg whites

  • 1 tbsp. water

  • 2 cups breadcrumbs

  • 6 cups spaghetti sauce

  • 3/4 lbs. mozzarella cheese

  • 1/2 cup Parmesan cheese

Directions

  • Preheat oven to 350º
  • Beat together egg, egg whites, and water in bowl.
  • Dip eggplant slices in egg.
  • Dip eggplant slices in breadcrumbs.
  • Place on baking sheet and bake 7-10 minutes on each side.
  • Spread sauce to cover the bottom of baking dish.
  • Place layer of eggplant slices in sauce and sprinkle with Parmesan and mozzerella.
  • Repeat with remaining ingreidents, ending with cheeses on top.
  • Sprinkle with basil on top.
  • Bake 35 minutes.
